head, shoulders, knees, and toes

there's nothing cuter than a man in an apron.
this morning i laid in bed and felt the baby tapping me.
for the first time.
i kept wondering if it was an arm.
an elbow.
a foot.
a head.
it's still just as magical this time as it was the first time i felt brennan and max move.
amazing little miracles.
thrilling!

it's been a really good food day.

what was YOUR afternoon snack?
ours was courtney's famous
KALE BERRY SMOOTHIE.
my new favorite concoction.
from me to you,

DIRECTIONS
1 cup greek nonfat plain yogurt
1 cup frozen berries
4 kale leaves
(next time i'm adding more kale)
3/4 c apple juice
1/2 banana
blend.
i am full.
my kids are begging for more.
this is a new staple at our home.
YUM.

for dinner tonight?
FISH TACO TUESDAY
they are so sweet and tasty,
that you'll have to make them every week.
an omega 3 addiction really.
cook time start to finish?
25 minutes.
WITH KIDS
in the kitchen.
i KID you not.

DIRECTIONS
Talapia cut in 1" by 2"pieces (1lb or so)
Wondra flour 5 TBSP (or rice flour)
1/4 tsp cumin
1/4 tsp red pepper
1/4 tsp salt
1/4 tsp pepper
1 1/2 TBSP canola oil
small flour tortillas
shredded cheese
avocados
cabbage
mango salsa*
(*any salsa works, but the mango salsa from costco was perfect with the sweet coconut sauce)
1. Make coconut sauce, set aside.
2. Cut fish and put into bowl with flour mixed and spices, lightly coat.
2. Heat oil in a skillet on about med-med high.
3. Cook fish 3-4 min per side making sure each piece is in the oil until crispy and cooked through, golden brown.

SAUCE:
1 cup cream of coconut (Coco Lopez--in the mixed drinks isle, or any brand)
1 lime, zest and juice--about 1/4 cup juice
Stir together.

i'm awesome:)

brennan did more finger painting with his clam chowder tonight than eating.
we just went with it.
you know,
to make up for the four hours of tv i let him watch this afternoon.
after the hour he watched this morning.
two of which that were hosted through pbskids.com so that's kind of like educational games.
i needed a nap.
win/win.
